Palm oil comes from the fleshy fruit of oil palms. It's less saturated than butter and contains no trans fat. Hydrogenation is a chemical process which adds hydrogen to a fat. It would turn liquid fats at room temperature (such as vegetable oils) into solid fats. Non hydrogenated, means this palm oil shortening has not received such chemical process.
